The Washed Process

In the traditional washed process, the coffee cherries are pulped and the mucilage is removed on the same day. The coffee is then placed in an open concrete tank for approximately 48 hours, allowing the fermentation to develop its characteristic flavor profile.

After fermentation, the coffee is carefully dried in a greenhouse, helping preserve its quality and achieve a clean and consistent cup.

This particular profile was crafted to highlight the sweetness of Bourbon-inspired characteristics, the floral qualities associated with Gesha, and delicate citrus notes, creating greater balance and complexity in the final cup.
