Process
Coffee cherries are fermented for 92 hours before depulping. A culture of Saccharomyces cerevisiae is then introduced, followed by an additional 92-hour controlled fermentation. Finally, the coffee is slowly dried on patios to preserve its unique sensory characteristics.
